Coconut Turmeric Oats (GF, V)

Over the past few weeks, I’ve been seeing an incredible acupuncturist for my fertility health, who is also helping me build better blood circulation and improve digestion. Part of the Traditional Chinese Medicine diet protocol for building blood circulation is to eat more warm, grounding, and nourishing foods. This “seasonal eating” approach helps to nourish our bodies during the Winter months and regulate our internal clocks...


You will be seeing quite a few more warm, wonderful, Winter dishes over here for the next few months, and since this morning was frrrrreezing, these Coconut Turmeric Oats were perfect!


Coconut Turmeric Oats (GF, V)


Ingredients:

1/2 cup gluten-free rolled oats

1 cup non-dairy milk of choice

2 Tbs shredded coconut

1/2 tsp turmeric

Dash of black pepper (helps to unlock those powerful antioxidants & anti-inflammatory benefits from the turmeric)

1/2 tsp vanilla extract

2 tsp maple syrup

Dash of sea salt

Dash of cinnamon (to taste)


Directions:

Mix all ingredients together in a sauce pan over medium heat, stirring often (about 3 minutes).  Once the oats are simmering, reduce heat to low, and continue cooking for another 10-12 minutes.  Allow the oats to stand for 5 minutes until serving.  Top with more coconut shreds, walnuts, or any of your go-to oatmeal fixin’s…
