Healthier Spinach & Artichoke Dip (GF, V)

Happy, Healthy Holidays!


I hope everyone is soaking up this time with family and friends, and getting geared up for a beautiful new year. Here is a super easy appetizer idea to get you started towards a healthier 2020! This is healthier take on a heavy, rich classic: Spinach & Artichoke dip. It is gluten-free, dairy-free, and absolutely addicting.



Ingredients:

1 16 oz package thawed, chopped frozen organic spinach

1 12 oz package thawed, chopped frozen artichoke hearts

8 oz dairy-free cream cheese (I use Kite Hill Foods)

1/4 cup avocado oil mayonnaise or Veganaise (I use Sir Kensington’s)

1/3 cup grated Parmesan (Or Nutritional yeast to keep it dairy-free)

1/2 teaspoon cayenne pepper

1/4 teaspoon salt

1/2 tsp garlic powder

Directions:

Mix together everything but the spinach and artichokes in a large bowl. Boil spinach and artichokes in pot of water until tender. Drain, and discard liquid. Mix the hot spinach and artichokes into the cream cheese mixture and stir together. Serve with gluten free pita chips, crackers, veggies, etc.
