One Bowl Banana Bread

How do you entertain a toddler after he wakes up from his nap? Get him to help you mash some 'nanners. This one-bowl banana bread was so easy to make, using only 10 ingredients. It's gluten-free, vegan, and refined sugar-free and most importantly, made of real, whole foods. But it's also versatile, so if dairy and gluten suit you, by all means throw them in there! Here are the details...

Ingredients:

  • 2 cups mashed ripe banana (about 3.5 bananas)

  • 1/2 cup pure maple syrup (or honey)

  • 1/3 cup oil or milk of choice (I used nut milk)

  • 2 tsp pure vanilla extract

  • 2 cups oat flour (or regular flour)

  • 1 tsp baking soda

  • 3/4 tsp baking powder

  • 3/4 tsp salt

  • optional 1/2 tsp cinnamon

  • optional 1/2 cup mini chocolate chips

Instructions:


Heat your oven to 350 degrees Fahrenheit. Grease a 9x5 inch loaf pan or line it with parchment paper. In one bowl, whisk all wet ingredients together. Then, pour the dry mixture and stir until it becomes a batter. And don't forget to add the chocolate chips!


Bake on the center rack for 40 minutes. After 40 minutes, turn off the heat but keep the oven closed. Leave it for an additional 10 minutes. If the bread is still not done, cover the top with foil. Turn the oven back on and keep checking every 5 minutes until a toothpick comes out clean. Let it cool completely before eating. Cover and store in the refrigerator for up to 5 days. You can also slice and freeze any leftovers for up to a month.
