Easy Breakfast Tacos

Let's give em' something to taco bout... How about BREAKFAST?

These were a game changer this morning, and I highly recommend giving them a try if you're looking for a quick, simple, healthy, festive, and delicious alternative to your normal weekday breakfast.


- 2 gluten free tortillas (non-GMO corn or my fave: Siete)

- 1 T grass-fed ghee or avocado oil

- 2 pasture-raised, free range eggs of your choice

- any toppings your heart desires (sauteed peppers, onions, leafy greens, avocados, salsa, trader joes everything bagel seasoning, etc.)


Throw the tortillas in a large cast iron for about 10 seconds each side on medium-high heat, then remove and set aside. Add ghee or oil to heated cast iron, and distribute evenly over the surface. Add peppers, onions, or other toppings and move them to one side of the cast iron to continue cooking (stir occasionally). Crack both eggs into the cast iron, and cook to desired consistency (I like my yolks a little runny). Using a spatula, remove toppings and eggs, and plate them on the tortillas. Top the tacos with salsa, everything bagel seasoning, avocados... anything!
