Happy National Granola Bar Day!
I decided to celebrate this one with some chocolate chip and peanut butter granola bars. These are SO simple, so versatile, and so delicious.
Chocolate Chip Granola Bars (GF, V)
(Serves 12-16)
Ingredients:
1/2 cup nut butter (I used peanut butter for these)
1/4-1/3 cup maple syrup
3 flax eggs (3 Tbs flax meal + 1/2 cup water)
1/4 tsp salt
1/2 cup almond flour
1/2 cup coconut flour
1/2 cup nuts of choice (I used macadamia nuts)
1/4 cup sliced almonds
1/4 cup pumpkin seeds
1/4 cup dairy free dark chocolate chips (I used Enjoy Life)
1/2 tsp vanilla extract (optional)
Directions:
Preheat oven to 350, and grease an 8x8 baking dish. In a large bowl, mix together nut butter, maple syrup, flax eggs, vanilla extract if using, and salt. In a separate smaller bowl, combine almond flour, coconut flour, nuts, seeds, and chocolate chips together. Add the nut butter mixture to the bowl of dry ingredients, and mix together well. Press dough into baking dish, and bake for 20-30 minutes (mine took about 28 minutes total). Allow to cool before cutting, and enjoy!
