Vegan + GF peanut butter chocolate chip cookies

Whoever said time flies the week of your wedding was right... I’m excited, over filled with love, totally nervous, yet completely calm all at the same time. Now, while I don’t actively subscribe to sweets being the remedy for all of these emotions (Though, we all do sometimes. We are human...), these cookies are perfect for any mood you’re in. They are gluten free, vegan, and totally delicious!


Vegan + GF peanut butter chocolate chip cookies: (Makes 24)

Ingredients: 1 cup almond flour 1 cup peanut butter 1/2 cup maple syrup (*good alternative to refined sugar) 1 flax egg (1 tbls ground flax + 3 tbls water) 1 tsp baking soda 1/2 cup of Enjoy Life Foods dairy free chocolate chips sea salt (to sprinkle on top)

Instructions: Mix together almond flour, PB, maple syrup, and chocolate chips in a bowl, and let it chill in refrigerator for about 30 minutes. While the dough is chilling, preheat oven to 350 degrees and mix your flax egg together in a small bowl. Remove bowl of dough from refrigerator, and add in the flax egg and baking soda, stirring everything together until it is thoroughly mixed. Scoop the dough and form your cookies onto a baking sheet with parchment paper, and bake for 10 minutes. (You want these to be a little soft)...
