I hope everyone is enjoying their weeks so far! This time of year often calls for a healthy afternoon or even morning pick-me-up during our week days, and for those of you who are in need, look no further... I made these "Sunflower Power Balls" for a client yesterday to take with them to work, and they are absolutely delicious. They are gluten free, plant-based, and refined sugar free, and include several of my favorite "super foods" (although I don't normally subscribe to that word, for this i'll make an exception). Hope you enjoy!
Sunflower Power Balls (GF, V)
(Makes 12-16)
Ingredients:
- 1/2 cup unsweetened coconut flakes
- 1-2 Tbs cacao powder (rich in polyphenols, reduces high blood pressure, contains many antioxidants)
- 1/2 cup sunflower butter (balances blood sugar, reduces inflammation, alleviates muscle cramps, supports thyroid function)
- 1/4 cup hemp seeds (good source of plant protein, aids digestion, supports skin/hair/nails)
- 8-10 pitted medjool dates (naturally sweet, boosts energy, reduces inflammation)
- 1 scoop collagen protein (promotes healthy hair, skin, nails, joints, and digestion)
- 1 Tbs coconut oil (boosts good cholesterol, balances blood sugar, reduces hunger)
- 1/2 tsp sea salt
- 1 tsp cinnamon
Directions:
Blend all ingredients together in a food processor, and roll into balls. Roll the balls into more hemp seeds, coconut flakes, etc. depending on your preference. Pop in the freezer for 15 or more minutes, and enjoy!
** Store in refrigerator and enjoy throughout the week, or freeze for up to one month.
