St. Patty's Blondies

Happy (belated) St. Patrick's Day!


I'm sure I'm not the only one, but I sort of forgot what day it was in the midst of all this craziness. As we are all hunkered down and working from home, I thought it would be a good time to share a super easy, delicious, and festive recipe that your kids will love too. These are NATURALLY GREEN blondies, as a result of sunflower butter reacting with baking soda, and they are insanely tasty. Baking is one of my favorite ways to reduce stress and lift my spirits, and hopefully some good recipes can help lift yours too.

Wet Ingredients:

1/2 cup peanut butter

1/2 cup sunflower seed butter

1 egg

1/4 cup maple syrup

2 Tbs coconut oil, melted then cooled

1 tsp vanilla


Dry Ingredients:

1 cup blanched almond flour

1/3 cup chocolate chips

1/2 tsp baking soda

1/8 tsp sea salt


Instructions:

Preheat oven to 350. Mix all wet ingredients together thoroughly in a large bowl, then add dry ingredients and mix together. Fold in chocolate chips and pour into a greased 8x8 baking dish. Bake for 15-20 minutes.
