Peanut Butter Easter Baskets (GF, V)

Happy Easter/Passover/Sunday! I hope everyone is safe at home enjoying a beautiful morning with your loved ones, your spouse, your pet, or yourselves. Here is a simple and fun treat to make today. These "Peanut Butter Easter Baskets" are gluten-free, vegan, and super easy to make with your kids. Minimal ingredients required! Hope you enjoy.



PB Easter Baskets

(Serves 12)

Ingredients:

  • 3 tablespoons coconut oil, melted and cooled

  • 1/2 cup natural peanut butter or PB2 (powdered peanut butter)

  • 1/3 cup coconut sugar

  • 1 flax egg

  • 1 teaspoon vanilla extract

  • 1 cup gluten-free rolled oats

  • 1/3 cup peanuts

  • ½ teaspoon baking soda

  • ¼ teaspoon sea salt

  • 36 colorful candies (I used Unreal to keep it clean ;)


Directions:

Preheat oven to 350°F. In a large bowl, stir together the coconut oil, peanut butter, and coconut sugar until completely combined. Add in the flax egg and vanilla and mix together. Next, add the baking soda, salt, peanuts, and oats and stir until well-combined. Refrigerate the dough for 30 minutes. Remove from refrigerator, and using a spoon (or clean hands) form cookie dough balls and place on a parchment-lined baking sheet. Bake until cookies are just set on the top (10-12 minutes). Top with colorful candies, and allow to completely cool before eating.
