No Bake Chocolate Peanut Butter Bars (GF, V)

No Bake Chocolate Peanut Butter Bars

(Serves 12)


Ingredients:

1.5 cups gluten free rolled oats

1 cup peanut butter of choice

3 Tbs Pure maple syrup

1 Tbs coconut oil

1/2 cup vegan chocolate chips (I used Hu Kitchen Gems for refined sugar-free)

1/4 tsp sea salt (ignore this if peanut butter is already salted)


Directions:

Line a 9x9 baking dish with parchment paper. Mix oats, peanut butter, and maple syrup together in a large bowl and press firmly into baking dish. Heat chocolate chips and coconut oil over medium/low heat until melted, stirring occasionally. Pour melted chocolate over PB oats and spread evenly to cover. Pop in the freezer for at least 30 minutes, then cut and enjoy!
