Easy "Zoodles" with Turkey Marinara (GF, VO)

Looking for an easy, low-carb, super satisfying dinner for a rainy night? This recipe has been a go-to when I'm craving pasta, but also trying to get my veggies in. The best of both worlds! Check it out...

Ingredients:

(Serves 3-4)

- 3-4 large zucchini

- 2 Tbs olive oil

- 1 lb ground turkey

- 16 oz marinara sauce of choice (My favorite is Rao's)

- Garnish: basil, parmesan (or nutritional yeast if dairy-free), red pepper flakes, etc.


Directions:

Using a spiralizer, make your zucchini noodles, and lay them flat on paper towels on the counter. Sprinkle salt over zoodles to help absorb some of the moisture. Set aside.


Heat 1 Tbs olive oil in large sauce pan on medium heat, and cook the ground turkey until it is no longer pink (6-7 minutes), stirring occasionally. Pour marinara sauce over turkey and mix well on low heat. Set aside.


In a separate large pot, add another Tbs of olive oil and cook the zoodles until tender. Drain the excess liquid, and plate your zoodles. Top with marinara sauce, basil, and parmesan.
