Easy Garlic Shrimp (Gambas al Ajillo)

Tapas night at home? Yes pleeeease. Here is a simple, delicious traditional Spanish dish you can whip up in just minutes with ingredients you probably already have on hand (as long as they include frozen shrimp of course). Gambas al Ajillo is one of my favorite things to order when I go out for tapas, and it was so easy to make right at home... Read on for details!



Ingredients:

  • 1 pound large raw shrimp

  • 1/4 cup olive oil

  • 2 Tbs grass-fed butter or ghee

  • 1/4 cup fresh lemon juice (about 1-2 lemons)

  • 4-6 garlic cloves, minced

  • 1 teaspoon paprika

  • 1/2-1 teaspoon red pepper flakes

  • Sea salt & pepper, to taste

  • chopped parsley for garnish (optional)


Directions:

Add butter, olive oil, garlic and red pepper flakes to a pan and heat over medium heat, stirring continuously. Sauté for about 1 minute or until garlic becomes fragrant, (careful not to burn it!). Add the paprika, lemon juice and shrimp and sauté for 2-3 minutes, until shrimp are pink and cooked through. Season with sea salt and pepper, and pour shrimp and oil mixture into serving dish. Top with parsley and enjoy!


Pro tip: Serve with crusty bread for dipping.
