These no-bake pumpkiny, peanut buttery bites are loaded with fiber and plant-based nutrients to keep you satisfied and give you the perfect boost for your work week! Pumpkin energy balls (GF, DF) (Serves 28) - 1 and 1/2 cup rolled oats (I use @bobsredmill) - 1/2 cup pumpkin puree - 1/2 cup peanut butter - 1/4 cup pumpkin seeds (loaded with zinc) - 1/4 cup honey (or maple syrup) - 2 tsp vanilla extract - dash of salt - 1 tbls cinnamo
